Noah began racing at 13 years old, beginning with Bandoleros and then moving to the latest models. He also competed in the INEX Legends car racing series and won in winning the 2013 Young Lions Road Course title. In 2015 the year he became a member of Jefferson Pitts Racing in the NASCAR K& N Pro Series West and clinched his first victory of his career in the race at Tucson Speedway.
In his debut stock car race season Gragson was able to secure a pole place and took home two races. He finished 2nd in point standings and was named his Rookie of the Year. The year 2015 saw him finished 8th in his first racing in the NASCAR K&N Pro Series East at Watkins Glen International.
As part of the ARCA Racing Series, the driver has been with different teams throughout the time. For 2015, the driver was driving the Ford Fusion and finished 14th at Kentucky Speedway. In 2016 the driver made two appearances with different teams, and came in thirtyth and fifth. He racked up his highest finish, finishing in the fourth place in Chicagoland after having competed in 5 races. The year before, he had two appearances for DGR-Crosley. As he prepared to race in 2017 Gragson was a driver in the 2017 season for Wauters Motorsports in the No. 18 Toyota at the Phoenix International Raceway and Homestead-Miami Speedway races. He finished with 16th position in Phoenix along with 15th place at Homestead. In October of 2016 He was recruited by Kyle Busch Motorsports to compete in the NASCAR Camping World Truck Series in 2017. In 2017, he scored his biggest career Truck victory in the race at Martinsville Speedway and finished 10th overall in points. He was working for KBM throughout the entire season.
In the year 2018, Gragson completed the NASCAR Xfinity Series debut, racing to the side of Joe Gibbs Racing in 3 races. The following year, he was a part of JR Motorsports as the full-time driver of the No. 1 Chevrolet but he left the No. 9 car more. He was a steady beginning season, with numerous top-5 and top-10 finishes. He was in the running to play in the playoffs.

For 2021 Gragson had issues with qualifying in his NASCAR debut, but was able to qualify in 2022. In the following year, he was a part of Kaulig Racing. Despite crashing in the first two races He managed to secure a career-best fifth-place finish the following year. He was the driver of No. 42 of Petty GMS Motorsports but was involved in the course of a fight and suffered the complication of a concussion.
